Oh Yum: Crispy Baked Sweet Potato Fries

Super easy, super quick, and these baked fries are great with or without the vegan yogurt dipping sauce. We found this recipe via The First Mess blog... awesome name, GREAT recipe. Definitely check her out. We replaced the yogurt in her sauce with a vegan cashew nut yogurt we were able to buy locally.

Here's what you'll need for the fries:

  • 1-2 large sweet potatoes, cut into .5" slices

  • 2-3 tablespoons arrowroot starch (you can sub corn if needed)

  • any fresh or dried herbs you prefer (cayenne, thyme, rosemary, turmeric, etc.)

  • fine sea salt (to taste)

And for the sauce:

  • 1 head of garlic (YAY SUPER FOOD!)

  • oil

  • generous 1/2 cup, non dairy yogurt of choice (unsweetened)

  • 2 tablespoons lemon juice

  • 2 tablespoons tahini

  • fresh parsley chopped

  • fresh mint shopped

  • fine sea salt (to taste)

  • ground black pepper
