Oh Yum: Green Breakfast Toast
Breakfast toasts are so "in" right now it's kind of crazy. People are putting everything on toast now, and why not? It's the perfect edible surface on which to experiment. For today's Oh Yum, we've made a super duper green toast. If you love gettin' your green on, this baby's for you!
In our opinion, every toast recipe needs some basic elements to make it properly mouth-watering:
- Something creamy
- Something crunchy
- Something zingy
Combine those three elements and you're on your way to creating a library of your own toasty adventures.
- 16 blanched and shocked asparagus tips cut to fit your toast
- 1 package alfalfa sprouts
- avocado, or store bought guacamole
- 2 slices whole grain bread, toasted
For our creamy base layer we used mashed avocado, however, if you want to give your toast a bit more bang, go with a fresh guacamole. You can get some that are spicy, tangy, you name it, whatever floats your boat, go for it. On top of that place a layer of asparagus tips. These have been blanched in boiling water for about 1-2 minutes and then shocked in cold water to stop the cooking so they'll still be crunchy. Top it all off with a layer of alfalfa sprouts... did you know they have a little boost of protein (almost 4 grams per serving), and a nice bang of vitamin k.
