Oh Yum: Peach Granola Breakfast Toast!
We're back with another breakfast toast for you to try. For today's Oh Yum, we were inspired by some of our favorite comfort food, the peach crumble. Our toast version combines some healthy elements in a twist on a classic.
In our opinion, every toast recipe needs some basic elements to make it properly mouth-watering:
- Something creamy
- Something crunchy
- Something zingy
Combine those three elements and you're on your way to creating a library of your own toasty adventures.
- 2 fresh peaches, pitted and sliced thin (peels on)
- 1/4 cup plain oat granola (we used Udis Vanilla)
- 4 tablespoons coconut butter
- 2 tablespoons pure maple syrup
- 2 slices of whole grain bread, toasted
Start off by slathering 2 tablespoons of coconut butter as your base. We like coconut butter for its mild, nutty flavor and creamy texture - perfect for pairing with more subtle flavors. Next, layer on your fresh peach slices, sprinkle with your granola of choice, and drizzle over 1 tablespoon of pure maple syrup. Now you're ready to enjoy! Are peaches out of season by you? Try swapping out with apples (and sprinkle with a dusting of healthy cinnamon) for a truly American classic.
