Oh Yum: Mushroom and Lentil Tacos

Everyone loves tacos... I mean really, if you don't love tacos I just don't know. ;) So when you go vegan or vegetarian what are you supposed to do? Sure you can get some textured soy protein and mix that up with some store-bought taco spices, but why not try to keep things as whole-food as possible? The less processed your meal the better you'll feel! :)


  1. lentil taco filling (see below)
  2. taco seasoning to taste (see below)
  3. vegan corn tortillas (toasted)
  4. 4 large portobello caps, sliced and sautéed
  5. 5 stalks kale, ribs removed, and chopped
  6. 1 Tbsp. olive or avocado oil
  7. pickled red onion (see below)
  8. pickled jalapeño
  9. 4 stalks green onion sliced thin
  10. avocado, sliced
  11. cilantro
  12. fresh limes sliced into wedges

Lentil Taco Filling

Skip the textured soy protein and go whole food with lentils. They're meaty and filling with a satisfyingly mild flavor. Once cooked, toss the lentils with some your homemade taco seasoning to taste.

1 cup black or French green lentils, cooked and drained
1-2 Tablespoons homemade taco seasoning to taste (recipe below)

Pickled Onion

So simple, so easy, and so fast, pickled onions are great on salads, in tacos, or chopped and sprinkled on top of any dish as a sweet and tangy garnish. Method: combine all ingredients so onions are covered and allow to sit at room temperature for 1 hour. Can be made well in advance and kept in the fridge.

1/2 cup apple cider vinegar
1 Tbsp. un-refined sugar (coconut, raw sugar, or syrup of choice)
1 1/2 tsp. fine grain sea salt
1 red onion, sliced thin

Taco Seasoning

You can make a batch of this and keep it handy in your panty any time you want to add a Mexican kick to your meal. Sprinkle as much or as little as you like.

2 Tbsp. chili powder
2 tsp. ground cumin
1 ½ tsp. garlic powder
½ tsp. onion powder
1 tsp. dried oregano
¼ tsp. paprika
1 tsp. fine grain sea salt
¼-½ tsp. cayenne pepper (optional)


Toss the kale and oil in a hot skillet until slightly wilted and softened. Sprinkle your homemade taco seasoning over top to taste, remove from heat, and set aside. Into each taco shell add some lentil taco mix, sautéed kale, and mushrooms. Top with your homemade pickled red onion and pickled jalapeño. Garnish with sliced green onion, avocado, and cilantro. Serve with fresh-sliced limes and VOILA! You've got your Taco Tuesdays back! NOM NOM NOM!
